My go-to lazy girl dinner for Friday nights is easy to make & uses all the foods I haven’t finished throughout the week
A WOMAN has shared the lazy dinner that never fails her when she wants to take it easy in the kitchen.
She eats it every Friday night, and it makes use of the foods she hasn’t eaten throughout the week so there’s less waste.
“My go-to dinner on a Friday night. I almost eat this every Friday because number one, it’s super easy,” fat loss coach Katie Penland (@katiepenland1) started off her TikTok video.
“Number two, it uses all the foods that I have not eaten or finished throughout the week.
“I could use them for this so I don’t feel like I’m wasting things.
“And number three, I can kind of customize it so that my kids will eat it too. I’ll just put the things that they like on it.”
She moved on to the big reveal.
“So, what is it? Nachos. I get it, it’s a no-brainer. But this is how I make it work.”
She pulled out a bag of Organic Blue Corn Tortilla Chips.
“These are my favorite chips. They are like a gluten-free chip so I like these for my nachos,” she explained.
“And I’m just going to take all the things that I have not used and top my nachos.
“Number one, the lettuce I haven’t used. I have this romaine lettuce, I’m just gonna chop it up, put it on top of the nachos.
“Sweet peppers, the ones that I have not finished throughout the week. I will cut these up, sautee them, put them on top of the nachos.”
Katie grabbed another key ingredient, a chicken.
“I batch-cook chicken to use throughout the week.
“This is what I have not used. I’m going to shred it, mix it with my favorite salsa,” she said while holding up Mateo’s Gourmet Salsa.
“I love this salsa, mainly just for the ingredients alone. The ingredients are all fresh, yummy things. And so that’s what I look for.
“But this salsa, mix it up. I have leftover cauliflower rice from a stir fry this week.
“I’m gonna heat it up. Guess what? Throw it on the nachos.
“And then I have black beans that were in my pantry. I will throw these on top as well. As always, guacamole avocado packs.
“Top it, add a little more salsa and sprinkle with cheese. You’re done guys.
“Put the things that your kids like on top of it as well, and it’s super easy. And then you feel good because you’re not wasting things that you have throughout the week.
“All of these things I already had,” she concluded.
