Mum reveals secret hack to sneak SIX bits of veg into your kids’ favourite mac ‘n’ cheese – they’d never know
A FOODIE has shared how she makes tasty mac ‘n’ cheese with six hidden vegetables in at, and even the fussiest kids will never know.
The grub looks so tasty that even adults are saying they’re going to make some for themselves.
The recipe was shared on Instagram by author and cook Carleigh Bodrug, who explained exactly how you can make it at home.
“This hidden veggie mac and cheese will allow you to enjoy the familiarity of everyone’s favourite comfort dish, while also sneaking some vegetables into your meal,” she explained on PlantYou.
Start by chopping squash, red peppers, cauliflower, carrots, onions and garlic – make sure they’re all the same size chunks and lay them on a baking tray.
Sprinkle some seasoning over them – Carliegh went with paprika and garlic powder, but you could also add some chili powder, or any other seasonings you like.
Roast it all until it’s golden brown – roughly 40 minutes – and then blend with some veggie broth, plus tahini, coconut milk, pasta water, hot sauce and nutritional yeast.
Blend until it forms the consistency of a cheese sauce, and then mix with your cooked macaroni.
“This will blow your mind as both a dip and the most amazing veggie packed mac ‘n’ cheese sauce.
After sharing the recipe on social media parents loved the idea and couldn’t wait to try it out.
“So much yum! Love getting in sneaky veggies,” one commented.
A second said: “My kids love this kind of sauce, super healthy too.”
“Omg no way, looks amazing, thanks for sharing,” another wrote.
Not everyone was convinced by the grub though, with some saying they would still add actual cheese to the dish.
“It’s just not mac and cheese with no cheese! I’ll still make it, but with my pepper jack,” one said.
