I made a week of traybake dinners for £1.25 a portion – they’re as tasty as restaurant grub and require no effort
WHEN it comes to autumn dinners, few things are as simple, tasty and satisfying as a scrummy traybake.
And one savvy mum has decided to help out, by sharing not one, not two, but five recipes for delicious dishes that come in at less than £2 a portion.
Ashleigh Mogford is a stunning mumfluencer who regularly shares everything from tasty meal ideas to supermarket hauls with her 382k followers on her Instagram account @Cardiff.Mum.
And in a recent clip that racked up more than 13.5k likes, she shared how she made five huge traybakes – easily enough to feed a family of four, if not larger – for just £25.
What’s more, these aren’t just regular bakes – they’re packed full of exotic ingredients and veg, and could rival any restaurant scran.
“Remember the recipes share ingredients,” she explains in the caption, “so it’s cheaper to cook them all or a couple of them than to cook just one”.
Harissa chicken and feta couscous
The first delicious dinner that Ashleigh showed off was a harissa chicken and feta tray bake with couscous.
She began by mixing the cous cous with a variety of vegetables you can see here, before topping with a kilogram of chicken drumsticks and sprinkling with harissa seasoning.
After adding a drizzle of lemon and a glug of olive oil, she baked to create a gorgeous flavoursome mixture, garnishing with a sprinkle of feta to give it a tangy taste.
Korma meatballs and rice
For another dinner, the canny chef whipped up a delicious korma meatball and rice traybake, perfect for any lovers of Indian food.
To begin, combine 500g of chicken mince with a range of herbs and spices, including garlic and curry powder, before shaping into meatballs.
After adding a layer of sliced aubergine, spring onion and red peppers, she poured over a jar of korma sauce before topping with her chicken meatballs, baking and serving with naan breads and rice.
Sticky hoisin sausages
Or if Chinese cuisine is more your thing, why not try the super easy sticky hoisin sausage traybake.
Start by adding a 12 pack of chipolata sausages, a chopped sweet potato, spring onion, sriracha seasoning, four chopped garlic cloves and 250g of mushrooms to a tray, before adding three tablespoons of hoisin sauce.
After baking, you get a gorgeous sticky mixture just as tasty as any Chinese takeaway.

She clarified in the comments that each bake can easily feed a family of two adults and two kids, bringing the total cost of each portion to an incredible £1.25.
And hundreds of fans left gushing comments raving about the delicious bakes, and sharing their intention to give them a whirl over the colder months.
