These Ham and Cheese Gluten-Free Pancakes are made by whisking together rice flour, baking powder, salt, and red pepper flakes. Then, separately, whisk together buttermilk and egg yolks, finally combining the dry and wet ingredients once combined. Beat the egg whites and fold them into the batter just before adding your scallions, ham, and cheese. Fry the pancakes on a buttered griddle and serve with a Dijon maple syrup, which is just a couple of teaspoons of Dijon, a pinch of salt, and maple syrup mixed together. Delicious!
