Enchilada. Chimichingas. Quesadilla. Tortilla. Burrito. Fajita. The words have a distinctly musical sound, don’t they, with a clipped, snappy rhythm that seems to invite one to dance, or go have a great time at the fiesta! Which was exactly what happened when the Mexican embassy presented a five-day food festival, “La Comida Mexicana,” to mark their National Day at the Diamond Hotel in bayside Manila. Chef Daniela Romero was flown in from Mexico to head the culinary team in laying out a holidaysome spread of Mexican dishes from avocado salad to Pescado Guachinango a la Veracruzana (try pronouncing the name without tapping your feet!). An authentic mariachi band of eight provided the sound (or sounds) for a loud, rollicking party packed to the brim with zest, verve, and vim.
