Being allergic to gluten and dairy herself, Reggio started working on her cakes in 2016, so she could finally enjoy the Mardi Gras staple.

BROUSSARD, La. (KLFY) -- In Broussard, the Whiskful Baking Company specializes in allergy-free king cakes to make sure everyone gets to enjoy the Mardi Gras season.

"Whiskful baking company is an allergy friendly bakery," Danielle Reggio, owner Whiskful Baking Co., said. "We do everything gluten, dairy, soy, nut and egg free. Always."

Being allergic to gluten and dairy herself, Reggio started working on her cakes in 2016, so she could finally enjoy the Mardi Gras staple.

"It took a lot of research to figure out what was actually gluten, dairy, soy and egg free, all of it," Reggio said. "And then a lot of experimenting on something that's actually good."

But all of the research along with the trial and error eventually paid off.

Reggio said she found a recipe that not only satisfied her craving, but also became a craving for her family, friends and now the whole community.

Needing to increase the number of cakes she makes, Reggio said she spent three years working towards her new bakery which opened its doors at the beginning of the month.

"I have outgrown my house many years ago," Reggio said. "Each year, I set a goal of making 100 king cakes, and this year I think I'm almost at 200. So yeah, this year has picked up. And then with the storefront opening, it's been a big excitement for everybody."

With her shop open and her cakes flying off the shelves, Reggio is glad the community is loving the cakes while also proving allergy free can still taste delicious.

"Gluten free and allergy friendly have a very big misconception of it's not good," Reggio said. "I think every person that has walked through the door so far, this last week has been like, oh my god, we're so excited you're here. So, the community has absolutely welcomed me with open arms."

And if you're still craving a king cake after Mardi Gras, the Whiskful Baking company plans to continue to serve the king cakes until the end of February.
