Vikings camp observations: Oli Udoh takes a turn at left tackle

Oli Udoh, the third-year offensive lineman, stepped in as the first-team left tackle while rookie Christian Darrisaw (groin) and tackle Rashod Hill (undisclosed) were held out of Monday's practice.
