AFTER experiencing the weight gain that pregnancy brings, a mom of two was determined to shed the extra fat.
She swears by the easy cowboy caviar that saw her lose 40 pounds postpartum.
Georgia based mom Chrissy (@myromehome) is revealing the veggie-based recipe that she said will help you get back into pre-pregnancy shape.
“Me mixing up my ‘cowboy caviar’ each week,” she began in the clip.
While she said some may view it as a “silly old TikTok trend,” to her it’s been a versatile staple for some time now.
“It’s my easiest serving of veggies and fiber each week and it 100% contributed to my 40-pound postpartum weight loss in the last 10 weeks.”
Losing 40 pounds in less than three months is no easy feat, so Chrissy isn’t ditching this dish any time soon.
“Not kidding when I say this makes it into almost every meal (as long as we haven’t eaten it all already).
“Tonight will be BBQ chicken + cowboy caviar quesadillas.”
The healthy mom added that she primarily eats it with eggs in the morning, but sometimes adds it to tuna salad, grilled chicken, tortillas, or pasta as well.
As for how you make it, you simply begin by dicing one red bell pepper, one yellow bell pepper, and one orange bell pepper.
Add half a cup of chopped red onion, three Roma tomatoes, and one jalapeno pepper to the bowl with the other veggies.
Then, add your healthy fats and protein: one avocado, 15 ounces of canned black beans, and 15 ounces of canned black-eyed peas.
For some carbs, throw in 11 ounces of canned corn.
Enhance the flavor with half a cup of cilantro, half a cup of olive oil, a fourth a cup of apple cider vinegar, two tablespoons of chili powder, one teaspoon of sugar, three tablespoons of lime juice, and salt and pepper to taste.
