I’m a budgeting mum and made a huge dinner for my family-of-four – it was so easy and under £2 each

FINDING something the whole family will eat and actually enjoy for dinner is easier than said done sometimes.

But one savvy mum found a bargain meal everyone loves and it’s so quick and easy to whip up too.

After seeing her friend make the same dish, Daisy, who posts online as @muddlethroughmummy, decided to have a go at making it for her family-of-four.

She grabbed broccoli for 72p, chicken for £4.75, curry powder for 25p, two tins of soup for £1.50 as well as 300g of rice and one bag of cheese and onion crisps, making the total cost for the meal £1.90 per head.

To start, she poured the tins of mushroom and chicken soup into a large bowl and added in a tbsp of curry powder and stirred it together.

Then she added cooked the chicken separately before placing in a large casserole dish with the copped broccoli florets.

The soup mixture was then poured on top, covering the chicken and broccoli.

Daisy crumbled over the cheese and onion crisps for a bit of added texture and flavour before putting it in the oven for 20 minutes at 180C.

Served over rice, the finished dish looked pretty tasty and filling.

“For a meat dish, I think it’s good value for four people,” Daisy captioned the video.

Other foodies loved the easy recipe and wanted to try it out for themselves after seeing it on TikTok.

“My grandma makes this, it’s an old Campbell’s soup recipe from right back in the day,” one commented.

A second said: “Not the most cost effective, but me and my family always put cheese over the crisps, it’s to die for.”

“Cheese and onion crisps make such a difference for a topping, so scrumming,” someone else wrote.

And someone else suggested using chicken thigh fillets rather than breast fillets for an even cheaper option.

“You can use thighs instead of breast,” another agreed.
