SIMPLY DOES IT: Roberta d’Elia, head chef at London-based Pasta Evangelists, says: “Southern Italian cuisine is rich with delicious pasta recipes made with just two or three inexpensive cupboard basics.”

Her favourite dish is spag­hetti aglio e olio. To recreate it, fry finely chopped garlic in extra virgin olive oil for a minute.

Add red chilli if you like spice. Toss cooked spaghetti in the garlicy oil and serve.

LOVELY LEFTOVERS: Don’t scrape un-finished pasta into the bin.

Pop it in the fridge and use the next day to make the classic Italian dish frittata di spaghetti.

Roberta says: “Mix four eggs, four tablespoons of Parmesan, a handful of fried pancetta and a sprinkle of fresh parsley with leftover spaghetti and fry on a high heat until golden brown.”

NOT-SO-ROTTEN TOMATOES: If you have a few tomatoes that have seen better days, use them up as a delicious sauce.

Tomatoes can be of any variety and a mixture of different types.

Cut in half and spread evenly over a baking tray with a whole clove of garlic.

Toss in a good couple of glugs of olive oil then season with salt and pepper. Bake on a high heat for an hour until soft. Blitz and add to cooked pasta.
